"Fat-Head" Pizza

An all-time favorite, right? Can't go wrong with pizza! This is perfect for pretty much anyone to enjoy, even our non-keto friends LOVE it. We love that you can add whatever toppings and truly make it your own. Make this one pizza or split the dough in half and make it mini-sized for a stay-at-home pizza date night. Enjoy friends! 



"FAT-HEAD" PIZZA

Ingredients
  • 6 oz shredded mozzarella cheese
  • 3 oz almond flour
  • 1 oz cream cheese
  • 1 whole egg
  • desired toppings
  • desired seasonings (we use Redmond Real Salt)
Directions
  1. Place the 6 oz of cheese and 1 oz of cream cheese in a medium microwave-safe bowl.
  2. Microwave for 1 minute, stir and warm longer until fully melted.
  3. Add the 3 oz of almond flour to the melted cheese and stir.
  4. Once that is blended together, add the 1 egg to the mixture and blend until it makes a dough.
  5. Add in your desired seasonings and knead well.
  6. Take the dough and place it on a stone pizza pan or baking sheet with parchment paper.
  7. Flatten the dough to the size of the pizza you would like using parchment paper.  At this point, you can make it into whatever shape you would like and however thick or thin you desire.
  8. Bake at 400 degrees for 12 minutes and then flip over the dough.
  9. Back on the opposite side for an additional 5 minutes.
  10. Add desired toppings and broil in the oven until toppings are crisp and the cheese toppings are melted.
  11. Dig in!
