Parmesan Pork Rind Chicken

Man of man, if you are like us then you have been missing some fried chicken! We have actually used this recipe on a bunch of meat options and they are all delicious! Super simple, easy, and oh so tasty! Robert, not a chicken lover, LOVES this meal and it goes really well with our mashed cauliflower recipe! 


Parmesan Pork Rind Chicken

Ingredients
  • 2 lbs. Chicken
  • ½ C. Grated parmesan cheese 
  • 1 Bag (7 oz.) pork rinds
  • Avocado or Olive oil (enough to cover the bottom of pan)-estimated 10 Tbsp. 
  • Seasonings (We use Redmond seasoning salt, Redmond salt, pepper, and slap ya mama seasoning) 
Directions
  1. Cut up chicken or leave whole
  2. Pour pork rinds, cheese, and seasonings in the blender
  3. Blend until desired consistency
  4. Pour the crumbs onto a plate for easier use
  5. Dip each piece of chicken into the pork rind/ cheese mixture (cover fully)
  6. Pour oil into a pan and let it get hot!
  7. Start putting the chicken in the pan
  8. Keep it on one side until golden brown
  9. Cook each piece until it reaches 165 degrees and is crispy golden brown
