Taco Casserole

This is one of the easiest meals to prep, freeze, and pull out later when you are in a time crunch. We love this option because it's all the goodness of tacos but without the mess! Great for having friends over or an addition to a party. If you get really fancy with it you could use it as a layered dip too!

Ingredients
  • 2 lbs. Ground beef
  • 4 Eggs
  • 2 C. Cheese (shredded)
  • ½ Onion
  • 1 Bell Pepper
  • 1 Jalapeno
  • 1 Tbsp Garlic
  • Seasonings (we used cayenne pepper, paprika, chili powder, and cumin)
Directions

  1. Preheat the oven to 350 degrees 
  2. Cook the ground beef and add the seasonings 
  3. While that is cooking mix in the bell pepper, onion, garlic, and jalapeno 
  4.  Spray the baking dish you will be using 
  5. In a bowl, combine the eggs and half of the cheese 
  6. Add the cooked beef mixture to the baking dish 
  7. Pour egg and cheese mixture onto the beef mixture 
  8. Mix that in and make sure there is cheese and egg between everything so it holds together best. 
  9. Sprinkle the remaining cheese on top 
  10. Bake in the oven for 25 minutes or until slightly golden 
  11. Allow to slightly cool, and then enjoy!
